Welcome to The Bistro, where we are proud to offer on-site dining for guests of The Everett. Reservations for non-guests are limited and reservations will only be taken one week before the desired date requested.

Our philosophy is to "Eat with Integrity – Live with Gratitude." Our intention is to carefully & continuously craft a menu that allows you to have as close of a relationship with your food as possible. We start by responsibly sourcing our ingredients with a focus on organic, regional, sustainable & seasonal fare. Our team then artfully blends this fresh concept with a twist on traditional southern influences. We invite you to indulge yourself with our savory & sweet signature dishes that are simply & respectfully presented to engage your senses.

Hotel guests receive a complimentary breakfast daily from 7:45 am - 10 am.

Dinner Menu
Dinner reservations in the Bistro are for hotel guests, with limited additional reservations accepted. Open for dinner Wednesday thru Saturday, from 5 pm to 9 pm, with our last seating time at 7:30 pm. Reservations for non-guests will only be taken one week before the desired date requested.

Enjoy your favorite libation or one of our signature craft cocktails. Our bartenders use creative house-made syrups & garnishes, as well as interesting artisan small batch tonics & bitters, to design our unique craft cocktails. Several of our drinks showcase regional North Carolina spirits including solar-made Mother Earth gin, single-malt Defiant whiskey, and Basil Hayden bourbon. Whether it's an updated twist of a revered classic, or an inspired new creation, our libations will leave a mark.
